Okay here it is- Wheat Bread
2 pkgs. yeast
2 c. water (90-110 degrees)
1/4 c. brown sugar
1/4 c. honey
1/4 c. canola oil (or veg. oil)
2 tsp. salt
4 c. white flour
2 c. wheat flour (I grind my wheat fresh every time)
Dissolve yeast in water. Add sugar, honey, oil, salt, and flour. Beat well-I use my Bosch mixer to beat and knead. Place into a greased bowl and turn over to grease top. Cover with a teatowel and let rise in a warm place until doubled-45 min.
Punch dough down, cover, and let rise again until doubled-45 min. Spray counter with cooking spray, cut dough in half. Roll each piece of dough with rolling pin to 1/2 inch thick. Roll up tightly, put in loaf pans. Poke tops with fork 5-6 times to release air bubbles. Cover pans and let rise again until doubled-1 hour. Bake at 325 degrees for 10 minutes. Reduce temperature and bake at 300 degrees for 25 minutes. Turn out of pans onto wire racks. Rub Crisco or butter on hot loaves.
I usually add a little extra flour-just until dough is not sticky. I also put my bread into bags before it is completely cool, because it stays softer that way.
This recipe is really easy-mix the dough in the morning, spend an hour on BYC, then go punch it down! Repeat. Also, the times are approximate, you can let it rise longer.
