It's nice to hear what other people are fixing for their meals. Sometimes I run out of ideas and get tired of the same old thing, so your ideas inspire me to be creative in the kitchen! Usually once or twice a year I make crawfish etouffee. It's sooo good! My recipe makes a huge pot of it which is why I don't make it often. It doesn't freeze well so I only make it when there are other people around to help me eat it. There's a potfull of it in the kitchen now that I started this morning. Letting it simmer a few hours before adding the meats helps the spices integrate into the mixture better, so by dinner time it should be nice and tasty! I usually use crawfish, shrimp and sausage, but have used chicken in it too.

Thank goodness you didn't hit them! I wonder what their deal was doing that?

I am still trying to figure that out, I've had people do crazy stupid stuff like coming to a stop in the lane in the middle of the road right in front of us, pullling over to the left, waiting at a stop light, then suddenly try and "beat us through", not yield at all, etc... but this car was already in the right hand shoulder out of the way, it was dark so our lights were way visible.

Was it a Toyota? Could have been a sticking gas pedal...

Count me in! A Cajun cook-off at your place sounds great!

I'm planning to go to the Shawnee show, too. Sounds like a fun weekend - chickens and food!

Edited to add that the sausage I like to use is andouille. I like the smokey flavor, but we can try the boudin in it also.

Sounds like a winner of an Idea, but carefull there will be several cajun's here at the house.. It may get a little "too fun" for some folks. But the food and company will be good.
