Saute the veggies in a skillet. scramble eggs seasonings and some cheese together then add to the veggies cook on low heat covered while preparing the rest the eggs should only be about half cooked just trying to contain the very liquidy eggs.
spray large cookie sheet w/ pam then place peperoni's in groups of 4 around the sheet slightly overlapping the 4 in a set. Take the biscuits (homestyle not flakey) put a hole in the center the press the edges to form a napkin ring looking biscuit, place ring over each 4 set of pepperoni then fill w/ egg mixture, top w/ little more cheese bake at 375 for 15 minutes, or until golden brown. Ready to eat or refrigerate and pop in the micro for 1 minute, can eat them by hand on the go no need for a plate.
You can adjust for whatever kind of pizza you like, sausage, canadian bacon and pineapple, ham etc... just change the veggies in the egg and the meat bottom.
Sorry I'm short on measurements I'm the kind of cook that flies by the seat of my pants and does a sprinkle of this a dash of that and handful of the other.
