***OKIES in the BYC III ***

Quote:
I use grands homestyle biscuits (8 pk)
5 eggs
mozzerella cheese
chopped fine typical pizza veggies (drained canned tomatoes unless I have enough fresh, onions, garlic, peppers, shrooms, squash whatever I have on hand)
pepperoni slices 4 per biscuit (I use turkey)
italian seasoning

Saute the veggies in a skillet. scramble eggs seasonings and some cheese together then add to the veggies cook on low heat covered while preparing the rest the eggs should only be about half cooked just trying to contain the very liquidy eggs.

spray large cookie sheet w/ pam then place peperoni's in groups of 4 around the sheet slightly overlapping the 4 in a set. Take the biscuits (homestyle not flakey) put a hole in the center the press the edges to form a napkin ring looking biscuit, place ring over each 4 set of pepperoni then fill w/ egg mixture, top w/ little more cheese bake at 375 for 15 minutes, or until golden brown. Ready to eat or refrigerate and pop in the micro for 1 minute, can eat them by hand on the go no need for a plate.

You can adjust for whatever kind of pizza you like, sausage, canadian bacon and pineapple, ham etc... just change the veggies in the egg and the meat bottom.

Sorry I'm short on measurements I'm the kind of cook that flies by the seat of my pants and does a sprinkle of this a dash of that and handful of the other.

Alright. Is there some weird chicken disease that causes them to droop their wing a little and hold it out? (4 mo old LF Cochin) Who'd have EVER thought chickens could have more things go wrong than even toddlers??? At this point with my luck I'm actually hoping for an injury. How sad is that?

Sooner - Thanks for the input on the planning thread. You should get an e-mail when new posts are made.

Kass - What a neat idea! I'm going to surprise DH with a chicken pizza tomorrow morning.

I'm sure many of you have loaned cages before, and I've done it so often that I forget who has which cage. I loaned a cage at the antique tractor swap last Saturday. The buyer lives in Broken Arrow, so I figured he could return the cage to the office where DH works. I sent DH a reminder e-mail. Here's part of the text:

....... I forgot about the cage I loaned to the buyer at the antique tractor swap last Saturday... I can't remember his name, but he has yours, and he knows where you work. So, if a stranger with a cage shows up in your office, you know he's legit...

Here's the e-mail I just got from DH:

This gets the prize for "Strangest email from a Spouse to an Office Worker". I will look for the stranger with a cage.

Glad to hear some of you got rain!

Sure wish we would get some.

That is too funny POCO but something I would do too. Bless you DH for doing that kind of stuff for you!

By the way how did the house painting go?

Hi Sooner - The original estimate was two weeks to sandblast and paint the house, but the sandblasting took a week and a half, so we went way over time and budget. If the rain quits I'll take some pictures. We have our native rock back (no more gun-metal gray enamel), and the trim and siding are complimentary to the rock. It's the house I envisioned when we first saw this place, but I never dreamed it would be so expensive to restore. The crew that did the work was fantastic. They struggled with equipment that broke, rental equipment that was delivered with parts missing, and high winds and days of rain. I know there were times they wanted to walk away, we've all been there, but they were professional and kept at it. They ran short staffed a few times because of food poisoning, a scratched cornea, and a broken foot. If we were living in medieval times these guys would have been Vikings. Not the robbing and plundering part, just the amazing strength and endurance part.
