Nancy's Fresh Apple Cake
Prepare pan as usual.
Cream together: 1 cup oil, 3 eggs, 2 cups sugar, 2 tsp. vanilla.
Mix together then add to first mixture 2 1/4 cups flour, 1 tsp. soda, 1 tsp. salt
Add to mixture and bake at 350 degrees for 50 minutes: 2 cups peeled, chopped Granny Smith apples (2 apples), 1 cup chopped pecans ( I always put in about 1 1/2 cups)
Just as you pull it from the oven melt in sauce pan: 1 stick real butter, 1 cup golden brown sugar, 1/4 cup milk. Boil 1 1/2 minutes, beat with a spoon. Pour over cake, letting it run in puddles until it stops.
