Yes you can use scratch, you can ferment any grain product.

I use the same bucket, since I use such a big one. Just for ease the way we do it is when we get down to about a 5 gall bucket amount of grain in the barrel we take the grain and 1/2 the liquid and put them in a 5 gall bucket then refill the barrel w/ grain fresh water and 1/2 the original liquid that was left. We do this so we can continue to feed out the fermented grains for a few days until the new grains have enough time to set up a good ferment. Any liquid still left in the 5 gal bucket we just re add to the barrel as we use the grain for those few days. You could just dump the new grains and water in the original container, but then you are feeding out barely soaked and unfermented grain for a few days, and trust me once they are used to the fermented stuff they will seriously turn their beaks up to the unfermented stuff.

No ACV? And do I ask for whole oats or rolled oats? And anything specific I need to ask for on the wheat?

No I did not use acv to start mine, you can use it to jump start the ferment if you want, but it isn't ness. it will ferment on it's own anyway.

Nothing special on the grains any grain product, I believe the less messed w/ is best so I just get the whole unchanged grain, but even the processed ones like rolled oats will work, but the whole grains are generally cheaper and have all the nutrients still in the grain, when I put corn in I prefer the cracked but they will eat the whole too. The ones I listed are just the ones I can get affordably and easily, barley and legumes can be added too, even rye, but I would be leary of rye b/c of a hallucinogenic fungus naturally occurring on rye(I don't have to worry much about it since I can't get rye easily) I would love to add barley to my mix though, but have not found any locally.

Do you have trouble (with a loose lid on top) with critters getting into it?
 
Mskitn, you should come to the swap in Tahlequah in October! I went to my first swap last month and met the coolest people! I'm going to bring a couple of my chickies so I can ask some questions, and if you're there, I'll give you one of my Easter Egger hens that I picked up to be companions for my little Dorking. I just got the EEs to work as flock peanuts, and have my fingers crossed for more Dorkings soon.
