There are alot of opinions on this but i think the easiest answer is YES there is a difference between brands of feed and it does influence egg production. I don't see egg size changing much in my own experience. I also think feeds work for some people that might not work well for you depending on what the birds get to eat beside layer feeds. I like to mix my own feeds mostly because its fun and I can add stuff that you can't find in comercially available feeds. It keeps folks guessing when they see your feed.
I have a "staple" feed of laying pellets, but also mix up my own feed mixture of rolled oats, wheat, BOSS, milo and wild bird seed. The chickens get a scoop of this every evening along with any veggies/fruits if I have them. During the colder months I mixed scratch and corn in also.

I do about the same, I have layers and game birds as well as Foo Foo birds and they all get a little different mixture depending on what they like and what they do layers get all you can eat layer ration, veggies, free range bugs (depending on time of year), if no treats are available we throw them some scratch which we make using an assortment of whole grains. The game chickens get a mixture of whole corn, black oil sunflower seeds, oats, milo, dry trappers peas, cat food, layer pellets or calf mana, unpopped popcorn kernals if we can find it, soy or wheat is good too. Pigeons like this mix too. Foo Foo birds get a mixture of all the above but we cut back on the corn so they don't look so "brassy". The waterfowl just eat what they want because they have free choice.
