***OKIES in the BYC III ***

It's going to be a chili party, we are having it also. DH was making it last night but got tied up with work.

Got the small pens & fence moved on Sunday, the tree pushed over & pulled off last night. Need to fille that hole & we will start boring the holes for the post on my building!!! It is moving along nicely.

Thank the Lord for the rain. News cast said that we would have to have 9-12 inches to get us out of drought conditions. You guys in the western side needed 12-15inches.....

Morning everyone. The rain seems to be over here. .4 in the rain guage, guess it's better than zero, that's for sure. I try not to complain, but sometimes it gets frustrating when less than 20 miles away they've gotten 2 and 3 inches. Guess when the good Lord is ready we'll get ours.
Found a striped varmint in my henhouse when I went out to close it up last night. By the time I got dh and a gun, it had disappeared. May be time to find a live trap.

The only BBQ flavored chip that I have found w/o wheat is stax, and a lot of chips have wheat, almost all mixes, boxes, soups, ready to eat or just heat and eat have wheat. Ice cream that has cookie dough, brownie, cobbler, etc.... a lot of candy bars, even some seasonings and boullion have wheat.

Chex has several gluten free options and they are good, betty crocker has a couple of good tasting (not good for you) gf mixes, a brownie, chocolate chip cookie, and something else can't remember off the top of my head. It is hard wheat / gluten (other flours other then wheat have gluten) is in soooooooo much stuff. Good news is you can lose weight! lol
Some of the bigger grocery stores have many more GF options then they used to, and a lot of the health food stores have more decedent options. Used to you could only get "healthy" versions of food GF (no chocolate cake or chocolate chip cookies, just the granola like cookies etc....)
 
Fairlady -- not sure where you are located, but I have heard there is an awesome new natural food store in norman with a good selection. Also a trip to whole foods once a month might be worth it just to pick up pantry esentials. might want to look into azurestandard.com. They have several drop in oklahma & are adding more in a few months. We don't hae allergies here, but lots of friends with kids who are allergic to everything. I used to host a playgroup each wk before we moved. Planning food was always a challenge.

Not sure if you are going to experiment with other sources of flour, I have used my nutrimil to grind white & brown rice & both gave worked well. Teff flour is also gluten free. It is the main ingredient in ingeria bread. I have tried to make injeria bread but can't seem to master it.

Dr put dh in for allergy testing-- hope nothing comes back, no offense but I don't want to tip toe around foods. It is a LOT of work!!!! And we would almost never be able to eat out again!

You just need to get you a good cook book and keep on cooking. I really think that the more you cook the better you are at it. I learned to cook as a child and I love to make homemade bread and everything. Which is a good thing because most processed breads have soy in them...lol...anyway, you could always suggest that your husband cook too.

Liking the idea of chili for dinner too...fried potatoes, cornbread...mmmmmmgood.

So far 1.25 inches this go around...not completely cleared yet...have to find a weather map somewhere. Today's chores include laundry and vacuum inside while the boys are tending to the tires on all the trailers. Those need to be in good shape to start bringing cattle home from the leases and then on to market. After this bit of rain, they will cut hay on one pasture in Prague that hasn't been grazed. Need every bit of hay we can hold on to this year.

Cooking your own food is always a great choice to know exactly what is in your food, and practice will improve your skills. If you are cooking GF you cannot just substitute a GF flour for a wheat flour in a recipe though. GF flours act totally different in cooking, you will need several GF flours per recipe and usually guar and xantham gums, also cream of tartar. Sorghum flour is a good staple flour, as is rice (brown or white), you will also need corn starch for most GF baking. If you are going to cook GF you will need a GF recipe book.
