No help here cuban, I know there are things you can do before cooking the meat.

You guys are killing me with the talk of chicks! I will be hard pressed not to come home with more chickens than I can house!

Anyone got polish chicks or eggs that will be at POOPS??

Well, before you cook it, apple cider vinegar. Marinate it for a couple of days, turning occasionally.

Afterward...horseradish? Habaneros? Wasabi?

Hi everyone as you know the fall P.O.O.P.S will be Sept. 26th. It has been decided that we would have a Pot luck lunch & dinner! We are looking for foods that are just as good cold as they are hot.

We will have limited outlets for crock pots if that is something you might be interested in. We will also have limited space to keep things cool between lunch and dinner, so if you bring something that needs to be kept cool make arrangements for that. For some folks that travel you could possibly have your ingredients made and put them together on site. Keep in mind the number of people that will be attending when making your dish or dishes.

We will also need paper goods, silverware & drinks. I have a couple of large igloo coolers that can be used for tea & kool-aid. If you have an one we could use let me know. I will need volunteers for set up before each meal along with volunteers for clean up after.

Please contact (PM) myself or TJ’s Nana if you have any questions or if you need a suggestion as to what you can bring. I will keep a running list of items.

Volunteer’s to help set up & clean up (will set times later

I guess we hit it just right. We didn't have to wait at all. But some people after us had to wait a little while. I have been there when we did have to wait.

Cuban, Sorry Once they are cooked there isn't a lot you can do except try to cover it up with some kind of sauce.
The wild hog I have eaten has always been very good. Some times you just get a stinker. I know its that way with deer too but most of the deer I have killed have been good.
Killed one in Colorado one year and I could hardly eat any of it.

NNbreeder (LES) Doesn't live in your area but I think they come to the Jones auction just about every Thursday.
Poultryandbees lives South OKC but I don't know if she has the testing stuff yet.
I know she is certified, bonafied and dignified.

Beth, when is the show? I haven't purchased my NPIP supplies yet, but plan to do that this month. Are the chickens bantams or large fowl? (since I will have to buy some bands)

I had some one time and I did not like the wild taste at all. However, I have friends that like it. I guess it's like anything else, either you love it or hate.

Before I cooked it I soaked it in milk like I was told and we still didn't like it.

Gees, about 100 years ago.....a neighbor brought in a couple
of antelope and I smoked it.......Back when I was in Little Rock.....
That was the best meat I have ever eaten. We fed the whole
neighborhood ! I've told Pa-Pa..."that's ONE hunt I'll save up
and pay for, if you'll go".

Speaking of canning......(LOL)......Pa-Pa and TJ got lose and went
to an auction just north of here...... What did they buy???????
I just talked to them.....Na-Na is the "proud" owner of 23 CASES
of canning jars !!!!!!!!!!!!! Gees, I've got 100's of jars that I've
been trying to ignore...... Hum........someone's got plans for
Na-Na.

As far as the wild hog.....an old friend of Bill's called and his
grandsons had killed a "young" ( yeah right) boar. He went up
there and brought part of it home. Lord....that was HORRID !
I'm clueless what could have been done to help that thing.......

Have a good one !
