Often times the temps on an incubator will spike upwards when a hatch is getting ready to occur. Up till now you have hatched out very small amounts of eggs which didn't give off enough heat to affect the over-all temp inside the bator.
This is something that I noticed while using the tabletop bators that I used in the past. To combat this when the eggs were due to hatch I would drop the temp in the incubator down to 98 deg.
When doing staggered hatches many will use a hatcher that is set to a lower temp.
Since your model is forced air, opening the door should not affect the humidity for any amount of time. The humidity should come right back up after the door is shut. I would be more likely to suspect either porous shells or thin shells that is causing the eggs to shed too much humidity and that is making the chicks dry out.
When we lived in town I was losing chicks in the shell and could not figure it out. Those that did hatch were up to 4 days early and in really rough condition.
Found the problem by accident one day. I was off from work due to illness and went to get a drink of water about 3pm, there was a hole in the curtain over the kitchen window and a sliver of light was shining on the bator heating it up. Moved the baor to another room and had no more problems with it.
