My chickens definitely eat better in the spring, summer and fall, than they do in the winter. They have a lush and varied range to forage in. I do what I can to compensate in the winter. Once we're buried in snow, then I start sprouting and give them wheat grass and alfalfa.
They go at the fresh spring grass like they're starving after a long winter, so I know they need the greens they're missing, if I only provide chicken feed in the winter.
