Possum Tartar

1. Kill a possum by....your favorite means.
2. Sprinkle liberally with salt, pepper, and garlic. Some folks also like onion.
3. Run over it one more time to mix the spices in thoroughly.
4. Contact your mental health professional and inform him of what you're about to do.

Yes, im glad im vegetarian.
I feed 4 possums each night, they are cute and cuddly looking but have claws like talons for tree climbing and being bashed up by a K- roo was bad enough for me!

I didnt know you all like possums, the dog got a hold of one the other day, I finished it off with a rock , its been pretty cold here so the carcass is fairly fresh if you want to come get it. Its about a 15 pounder.

my favorite possum recipe runs something like:

1) get a possum. Kill, clean, cut into pieces. Sprinkle with salt.
2) bring 2 qts chicken or beef stock to boil in large pot.
3) to the stock, add 1 lb potatoes cubed, 1 large onion diced, 1 celery stalk diced, 2-4 carrots cut in small pieces.
4) simmer 45 minutes or til vegetables are soft.
5) season to taste.
6)serve.
7)discard possum - you didn't think it was going in the soup, did you?

Pat, who will admit to never actually having *had* possum, tho I have had 'proper' Brunswick stew with squirrel, and it wasn't bad

Shoot everyone knows that recipe left out the most important step of possum preperation.
You can't eat roadkill. They taste like rubber. (Unless you got lots of alcohol) You gota trap your possum and feed it for a week. Then and only then is it any good. Serve with polk salad greens and cornbread.
