Just add water, mix to an oatmeal consistence, and allow to sit until it rises (or as long as you can). It should smell like luscious bread dough. The first time takes the longest. After that you just mix it up in the same bucket with a cup or more of the previous batch in it. It will ferment faster because it has already caught/collected the wild yeast. If you want to jumpstart the first batch, just add some fresh yeast, sourdough starter, live whey, a bit of juice from any live ferment, plain, active yogurt, a bit of active ACV--anything you have with active cultures. You don't need much.

Oh yes... if it's too soft, add more feed. You don't have to wait for it to ferment again. The birds climb all over their feed. You don't want them sinking in it!
