My rooster did not like my broody hen and pecked a hole on the back of her head where the skull was exposed. well I stitched it up and it healed but today I took the stitches out and the scab fell off it never properly AND HAD mildew under the scab closed the dead skin around the wound fell off making the scab, so my question is now do I sew up the exposed area again hoping it will heal or leave it open, the area if i sew it up will be very tight

I would not sew that back up, you risk infection or it molding again.
Flush it very well with Chlorhexidine or diluted betadine. Apply a triple antibiotic ointment or Vetericyn. Leave the wound open but moist with the ointment or spray.

Is she eating/drinking o.k.?
