Open pen???

Some will fly out, others no - it depends on the chicken and the height of the pen.

The more important reason pens and coops are enclosed is predator protection. More keeping hungry predators out than chickens in!

Well it is as much as something flying down and grabbing them too, Right? So yes they could possibly fly out if spooked but I would be afraid of the other to.
 
depends on the height. I know of some people who clip the chickens wings (feathers) to be sure they don't fly out. But most people who put on an enclosed top does so to prevent predators (hawks, raccoons, etc.) from getting into the pen and killing the chickens. I have a roof over my pen (8 X 10) not only to prevent predators from entering but to also keep the chickens dry from the elements and for shading.
