Orher chickens picken on small hen

We have two roosters and 6 hens but one hen keeps getting attacked and driven away from the water and food

Two roosters and six hens is probably two roosters too many. Provide multiple feed and water stations and monitor to see that she gets enough to eat.

We are getting rid of the roosters but the hens pick on her too

I would separate the roosters now in a large crate or pen. Then check your picked-on chicken to see if there is something wrong with her or if she is just low in the pecking order. The cockerels probably are creating such havoc that the hens are joining in on picking on her. If necessary, you can temporarily cage the picked-on chicken with her own food and water, but keep her with the other chickens in the coop so that she stays a member of the flock
