That's a really tough one, as there is a fair amount of overlap. Thai are not standardized in the USA and show a lot of variations, Aseel, are hugely variable as well. So, there may be exceptions to these statements, these are generalizations.

Malay-Cushion comb, very high station, shorter tail, pearl eyes, yellow skin/legs. Heavy brow ridges. Small wattles.

Thai- pea comb, moderately high station, but not exaggerated, medium to quite long tail, usually pearl eyes but have seen other colors, usually yellow legs but have seen other colors, usually smaller than a Malay, colors could be anything. Lighter brow ridges. Very small to no wattles.

Aseel- pea comb most common, but other combs exist, station varied between very high to quite low, depends on strain, typically are medium, tail usually medium, but, varies from quite long to quite short, usually pearl eyes, but can vary, often have square shanks, shorter crow, eye centered in face, often short beaks and heavy heads, but not always. Usually no wattles, but, can vary a bit.

The only diffence between the Thai, Malay and Asil as compared to the RIR and Jersey Giant is that the former are very Ancient Breeds while the latter are new creations. Further, the Asil is the oldest documented breed in the world.
