Our Professional Chicken Cooking racks and pits..... (lots of pics)

We built these racks from a design that the Oregon Fryer Commision used to use. This rack had 15 birds on it. It slow cooks for about 2 hours, and we turn them and brush them with melted butter as they cook. We also put a special rub on them, and it turns out fabulous! We have 4 racks and can feed close to 300 people with this set up. This was a test run for my brothers wedding next month, and it gave him a chance to see what he would be eating... He was so excited! We ordered these birds, but are possibly going to do a batch of meaties ourselves in the future and cook them.

Thats the same system that the church I grew-up in did the chicken for the church picnic. Really good meat
