Over run with eggs, please help!

Hubby came home from work (works with his dad) and said that his dad wanted to know if we had any more eggs laying around they could have (we'd given them two dozen... though the first was tossed because I forgot to tell MIL that our eggs are stored on the counter... she thought that they'd "gotten warm" and thus weren't safe... doh!)... DH told him that I'd just made a big batch of deviled and HB eggs so we only had a handful left... FIL said "Well shoot. After eating yours... well the store ones just aren't good enough anymore. Never noticed that you can't even see the difference between the white and the yolk hardly. Guess I got spoiled"

So, definitely a woot... if your neighbors, friends, family are anything like my In Laws they'll be happy to take free eggs, but most especially after they've tasted the difference.

Also, a call to local charities is definitely worth it. May tell you that they personally can't accept, but they also might be able to give you a lead to another who can!

I love the idea of the sign/donation thing... spreads the word about how good home grown is, gets others interested, helps out your neighbors, and offloads your excess... sounds win win all around!

Recipe wise... don't forget quiche... or there's this yummy chili relleno bake... SO good and way easier (less time and way less mess) than true blue rellenos.
 
Sitting here wishing I had your problem, I have got people asking to buy eggs and I am not getting enough for my own use yet! But when I DO have too many eggs, soon I hope

a great way to use them up is homemade creampuffs. Such a simple recipe but a single batch takes 8 whole eggs! YUM!

I forgot about those! Also something I forgot is popovers! We used to have them growing up...Mom said they took too many eggs (we didnt have chickens) so she only made them when we had stew. They sure were good though....digging out the recipe now!

I have TONS of eggs in my fridge right now and in buckets and pans on the counters...way too many eggs! I have a sign out front, have tried Craig's List (keep getting flagged off) and now give them away. I am picking up about 34 eggs a day sometimes less and sometimes more. I let my chickens hatch all they wanted to in the spring 'cause I had no room in the fridge!

Can the person tell more about how long they keep on the counter? I know they dont refrigerate ANY eggs in Europe...thanks! Terri O--drowning in eggs!
 
I am going to try to get with the local health food store and see if they will carry mine. I haven't tried yet but I am going to call next week when I have enough. I have all of them spoken for right now. I am getting from 10-14 a day now! Yeahhhh!! I love my babies! I am selling them at work and DW is selling them at the hospital to co-workers. I told them Until they get bigger and regular they are 1.50 for a doz and $2 for 18. But when they get regular they will go up to $2 a doz. and $2.50 per 18.

I have 7 that should be laying but i'm getting 3-4 eggs a day which means someone isn't doing their job......I want to have enough to sale at my fruit stand but how many layers will I need to have enough to sale and supply a 6 person household? We make at a minimum of 2 batches of home made pancakes, which takes 3 eggs per batch along with french toast which is a minimum of 6 eggs....so by the time my ladies make, they've only supplied for the weekend crew. Any ideas? I'd love to be over run with eggs!!!!

I sure wish I had your problem I have 3 that should be laying but only one is but today I actually got a normal sized egg she has only been laying for nine days!!! I also have twenty more that are only eleven weeks old so they have awhile yet before they start to lay. When I get that many I am going to put a sign out so it will at least help with the feed bill!!!!

Spaghetti carbonara - yummmy - and it takes lots of egg yolks if done right - then use the egg whites in cakes...

also fried rice - i make fried rice at night - and then put the leftover rice in a pan the next morning with lots of eggs - and sausage or hame or hamburger - depends on what I have left - makes a heck of a hearty breakfast !

My family is excited already - got my first egg yesterday - but she did it while roosting and it fell in a garbage can - so it was ruined.. I almost cried

but I have faith there will be more - and my family gets em after I am done... and then when they are saturated - I'll take em to work!
