What s the best combination to get nicely marked paints. I currently have three paint hens with a black rooster. If I get a paint rooster can he go with paint hens or should he have black hens?

Breeding back to black will result in larger black patches.

I don't understand the theory or thought of breeding back to black giving the bigger patches.
That isn't the route I'd go. The way paints work is that the one copy of dominate white doesn't completely cover the black underneath. IMO the key is breeding the ones that show less coverage.
Paint X paint and paint X black result in the same average amount of paint chicks produced.
Since that's even I'd breed paint to paint so you can see and pick which show the more desired look on both sides.
There no genetic reason that breeding back to blacks would improve the odds of your goal.
