I'd go with tin instead of the plastic. Plastic breaks down way fast and is rather expensive. That siding that everyone uses, T-something. I'm cheap, lol.
 
For cheap plastic sides I would suggest a 100ft roll of 6mil plastic sheet (contractor grade). Lasts much longer than expected. Put it up with roofing nails and you have a waterproof side.

For ventilation, I would suggest hardware cloth openings under roof overhangs.

One thing to consider is that most pallets are weak. You will want strong pallets to keep critters out. You will also need to put hardware cloth over any gaps such as edges. Also consider putting it on a cinder block foundation so critter cannot just burrow under a thin wall and then climb up the interior space.

I really like this idea and want to try my hand at it.

I'm just about done building a small coop with pallet wood for siding - it was a lot of work taking those pallets apart, and I can't IMAGINE how much work it would be to build a coop that big with pallets!! I'd rather side it with toothpicks

That said, I like the design but you don't mention where you live or what the predator threat is. I can see using pallets but every opening would have to be covered with wire to keep out rats, mice, snakes, raccoons and coyotes which all live in all urban areas. Another consideration is horizontal and vertical support to protect against wind sheer.
