I've been sorting things in our kitchen lately, and today as I was going through some canned goods, I noticed that I had
- 1 can of refried beans
- 1 can of Rotel Tomatoes and Green chiles
- 1 can of Hormel Turkey Chili without Beans
- 1 can of cheddar cheese soup
- Frank's Red Hot Sauce
Well, if there are refried beans in the house, I'm automatically in the mood for a bean dip. So I took these items, along with a few things from the fridge, and threw together my own bean dip recipe so I'd have a snack while I cleaned.
1. Get a 9x9" baking dish (or similar size). Spread the refried beans on the bottom.
2. Drain the Rotel. Spread the tomatoes and chiles over the refried beans.
3. Sprinkle on some shredded Cheddar cheese.
4. Top with some cream cheese.
5. Spread the turkey chili over the cheeses.
6. Add a can of cheddar cheese soup over that.
7. Top with the remaining shredded Cheddar cheese, and sprinkle liberally with Frank's Red Hot sauce.
8. Bake in a 350-degree oven until hot and bubbley (about 20-25 mins.).
9. Enjoy! (I prefer Tostitos Scoops and a glass of Diet Pepsi on the side).
