Pantry-palooza collection of my hybrids

Start with a box of Zatarain’s Yellow rice.
Add a modest spoonful of curry powder.
Slice up a couple chicken-apple sausages in ~1/2” thick wafers.
Add a can of beans

Toss all of it into the trusty instapot. And use the “cook rice” setting.

Half of it became “leftovers” and waited a few nights in the fridge…

Last night was it’s reheating…. With a nice layer of Pace picante salsa… toss it in the toaster oven….

Add the side salad… done good.

Picked up two hunks of pork at Kroger, put them right into the freezer until I could decide what will season each one….

A couple weeks go by. Pulled one out last Friday to thaw…. Saturday, sliced it into ~3/4” slabs. Found the proper size container to fit them & the sauce for marinading…
Here’s the flavor I chose:

Leftover trifecta?

Hot Italian sausage, sliced thin
Last 1/3 of a bag of spinach that I froze a week ago so it didn’t go slimy
A big chunk of spaghetti squash from a few days ago

Oil pan. Layer of the squash, then sausage & spinach… then a nice coating of “Sockarooni” sauce….

*Brunch for dinner*? Sure.

Smoked ham (from our local masons’s brisket & sausage sale, semi-annually) that I chopped up.
Eggs from our Silkies
Parmagiana cheese
All cooked nicely

Kale salad with a dill/lime & cumin/ranch dressing

Chai tea & some of my turmeric drink that had settled for the last 1/3 day…. Calculating what lumber I still need to get…

A combination of Leftovers with a twist.

Sliced & chopped up smoked ham is the bottom layer; a thin layer of parmigiana cheese; a thin coating of grits. 6 eggs cooked on top.

The grits are a odd experiment.
Yesterday I made a batch; supposedly a 4 cup recipe didn’t completely soak up the water.

I added ~1/4 cup of large oats. Restarted the instapot. The “8 minutes” steam veggies setting. It soaked up a modest amount of the water but, not all of it. So I added a couple tablespoons of grits & started the instapot- one more time, same setting.

Still didn’t soak up all the water. One last time on that setting. ….. nope. So I unplugged it & left it sealed over night. Woke this morning ~10AM & looked at it …. It finally soaked it all up & looked like it should.


This batch worked great with the leftover veggies, turmeric, mustard, sriracha, chopped hame & eggs scrambled together.

Well, here is a reboot.
