Okay, so I’ll byte the bullet and make this a slow & start retrospective project.

Starting today with the pancake bread cookie version 9 or 10 now? Anywho. Started with the gluten free waffle/pancake bag mix in the freezer.

Using the recipe as a jumping off point
1 cup powder
1 lg egg
3/4 cup water
1tbsp cooking oil

What I do now a days…
I usually triple the egg or more…

3 eggs
Walnut oil (the last of the bottle ~2tbsp)
Then filled the bottle with some hot water, shook it up, that got the rest of the oil on the sides of the glass bottle..
That was ~3/4 cup of quite hot water
Added 3 hand fulls of large raisins (these happened to of been mgr special sale of organic)
~1/4 cup of almond flour
~1/4 cup of shredded unsweetened coconut flakes
~1/4 hemp seed milled
~1 tsp cinnamon (semi heaped)
1 cup the pancake/ waffle flour mix

Oiled the pad (avocado oil)

Toaster oven at 400 for ~20 minutes (from cold iron) I left it in there for ~10 more minutes after the bell “dinged.”

Here’s what it looked like when I pulled it out. Still quite warm. *almost to warm to hold for more than about 8-10 seconds barehanded.

So. As for the stuff from the past? I’ll make sure to post the date the hybrid was con-cocked - as I find them in my history here in all the myriad threads and chats. Fair enough?

Items will be using toaster over, insta-pot, regular oven & cooktop. I’ll also share my coffee and *Tea* creations as well…

/end of line.

Tonight’s dinner for Pantry-palooza is another episode of: Leftover reboot.

The scalloped potatoes have the *wrong type of cheese* for our 24y/o. It’s a texture issue that goes wayyyy back. Anywho.

Pork loin from a previous meal that got tossed in the freezer a while back- it gets sliced and then chopped up into small bytes, added a 4 cheese sprinkling & heat it up in toaster over.

So now it’s Ham & tater au graten (sp).

My current snack was a true midnight idea during a commercial break on TV…..

Started with the “Kick of Lime” flavored Kroger brand tortilla chips but, all tortillas work here!
Started with just a very light spread of Nutella… then a mix of peanut or almond butter and Nutella….

The ratio is key to not getting an over powered flavor of sweet chocolate…
Anywhere from a light film to a 1/3 ratio to the peanut butter on the chips.

Enjoy.

Part 2:
If you want to expand this to use the toaster oven?

Properly butter the soft tortilla
Then your choice:
a) start it to warming up in the toaster oven & butter melts just enough
b) slight layer of butter then a duplicate layer of Nutella and atop that the peanut butter…
c) toast it until it’s almost to hot the water.

Enjoy

/end of line.

Brunch anyone?

1 can veggie soup
4 eggs from our girls
Enough shredded parmigiana cheese
A lot of butter on the bagel

Bagels in pan 1st
2nd Sprinkle the cheese
3rd mix the soup into the bowl with the eggs getting scrambled
4th pour over the bagel halves
5th toaster oven for 2-3 batch’s of time until it’s *done* to your liking.

This was done at ~400*
And the timer was turned to the middle of the light & dark toast icons. So, about 3-5 minutes each batch of “time.”

Fresh outta the oven.
Started with the base model:
22037288-EEF1-4B40-8E5C-A268F5F21A92.jpeg

Pulled the following from the freezer & pantry:
1) bag of frozen walnuts (well over 1 cup of hand crushed walnuts added)
2) baking soda
3) oat bran (the last of it = ~1/3cup)
4) shredded unsweetened coconut flakes (the last of it = ~1/3cup)
5) Teff flour, almond flour & flax seed meal (~1/4 cup of each)

1C0A2F3B-6D5C-45CB-8B60-28A74EAF189A.jpeg
6) 4 or 5 eggs (I forgot)
7) ~1/3 cup butter
8) substitute almond milk for the water on box directions ~3/4 cup
9) the oil? Olive oil & I gave a bit more than double the box directions
91CFEF7B-D357-4AA4-93B4-0717E7FC8232.jpeg

Directions state: 350* 28-38 minutes depending on pan size
I put them in the oven, turned on to 350* set timer for 20 minutes. When timer went off I reset timer for 8 more minutes.

Disclaimer: I know basically how long this oven warms up. So why waste time *waiting* for it to warm up… we have been here in the house for over 11 years. I’d started experimenting with this time topic about 2014/2015. To go from cold steel to… say, 350*F is typically ~12-15 minutes as it’s a convection oven.

So here it is finished:

The heart shape and mini loaf are both ~3/4-1 inch thick.
The long loaf is 1 2/3 to 2 inches thick at the center.

Critique by our 24 y/o son…. The chocolate is now an accent in these brownies… but, good none the less.

So next time? I’ll add a heaping helping of baking cocoa.

ETA: 24 y/o added, when he went for 2nds, “I stand by my first observation but, it’s still very good.”
