Are you okay today?
I’ve been “off” for several days - of late.
That was what happens when you set the instapot to the “veggie steam” mode. That’s 8 minutes of steam and likely 10 minutes to reach steam. And then it sat for 4hours in “keep warm” mode. The rice had completely broken down. It was as if I’d made a pseudo-omelette.
 
And I’m very likely making another mess…. With the instapot.
Thinking about a rice & beans mix-up… so, I did this:

1 cup rice (2c water)
1 lg can kale greens
1 lg can refried beans

Once it’s blended….. not sure the next step yet… for protein in a small test from this batch?
Maybe: sausage? Pulled Chicken (from rotisserie)? Bacon? Tuna (in the can)?

With kale in the mix, I believe the bacon would be best. Sausage would be my 2nd choice.

So the flavors with “pulled” rotisserie chicken it’s actually surprisingly tasty.
Just enough saltiness.
The 32oz cans are basically equal 1/3’s with the rice. And the seasoning of the kale greens was just enough to give a nice warmth to the meat.

With kale in the mix, I believe the bacon would be best. Sausage would be my 2nd choice.

(Giggles) the “pulled chicken” was stacked on cutting board and chopped up a bit more so the 2+ inch chunks became ~3/4” chunks and there was at least a cup of chicken *UNDER* the 3 way mix on top.

There are 2 Tupperware servings if the rest in the freezer for now.

There are 2 more 32oz cans of “seasoned greens” & “collered greens” to be experimenting with rice (and maybe different beans too?) in the coming weeks as well.
 
Not so much Pantry as Leftover-palooza tonight…

I’m halfway to making the recipe from “what’s-her-ID” in here: the pimento cheese pasta with olives.

I snagged some of the pasta I had cooked a couple days back for this.

Bottom Layer = last of “pulled rotisserie chicken & broth”
2nd layer = pasta
3rd layer = semi frozen veggies
4th layer = leftover cherry tomatoes
Top layer = pasta sauce

Warmed up in toaster oven ~8-10 minutes at ~350*

The broth was just enough (I’d actually dumped a lump of so of minced garlic over the rotisserie chicken when it went into the instapot to steam up for de-boning.
