A friend of mine got the new Paula Deen cook book and she brought me a copy of this recipe. I thought I would share it. this would be a great pic nic food.
Paula's Perfect Pickled Shrimp and Eggs
2 cups apple cider vinegar
1 1/2 cups white vinegar
1 small yellow onion, sliced
1 Tbs mustard seeds
1 Tbs sugar
1 tsp hot sauce
1 tsp salt
2 bay leaves
1/2 lb shrimp, peeled and deveined
12 hard boiled eggs, peeled
In a sauce pan, combine vinegars, onion, mustard seeds, sugar, hot sauce, salt, and bay leaves. Bring to a boil, then reduce heat and let simmer for 5 mins. Add the shrimp and cook until just opaque, about 2 mins.
Place the eggs in a large, very clean jar ( or use 2 smaller jars) and pour in the hot liquid and shrimp. Seal the jar-jars and refrigerate for at least 24 hours, or longer if you like more pickle to your egg.
I'm gonna try this soon as we get great shrimp here on the coast.
