I weigh my chicks every few days and if they aren't putting on weight, they are sick, so maybe start weighing them, that should help you notice the moment they get sick and it will give you time to figure out a treatment plan. I use a digital kitchen scale like this:

That picture was taken yesterday and today the chick will be heavier. If it isn't, I will watch it very closely for signs of illness (runny poop, depression, not eating, droopy wings, etc).
