Peeling Fresh Eggs

I found this somewhere on this site but it works like magic but I cannot take the credit for it.

1. Bring water to rolling boil ( no salt, no vinegar, just water.)
2. ladle eggs in to boiling water
3. boil for allowed amount of time. I usually do 22-25 minutes.
4. ladle out of boiling water into ice water. (I fill my kitchen sink full of ice water and ladle eggs into it)
5. let cool, then peel at leisure and will peal like a dream.

I just did 5 1/2 dozen for Christmas and only ripped 2 out of 5 1/2 dozen.

It really is TOO easy after all the other ways.
 
I have tried various methods for boiling eggs with varying levels of success. Then I read a tip from a BYC post about steaming eggs. Don't know why I never tried that, as I am a steaming maniac. Let me tell you. Steaming blows all other methods of hard- boiling eggs out of the water. It's really easy to do and the shells don't stick at all. 10-12 min. will do it. I also always use an ice bath afterwards.
 
I just dunk my boiled eggs in a really icy ice bath until they are cooled/nearly cold to the touch. The insides are usually warm still. Also, I tend to like soft boiled eggs, so I don't know if that makes a difference or not. But I just got a new deviled egg platter to serve up those yummy delights - so I will have to try the other method here about adding the eggs once the water is boiling etc.
 
I just made a dozen Fresh yesterday eggs into deviled eggs yesterday.......I put the whole dozen eggs into cold water, put on stove and brought water to a boil then covered the pan, removed the pan of eggs from the heat and let it set for fifteen minutes. I then put the pan of eggs under cold running water for a couple minutes. Turned off the cold running water and let them sit for ..well it was suppose to be a few minutes but I got busy and it was more like 45 min. I then cracked them and peeled them under gently running water. NOT ONE EGG TORE! They all came out perfect. This method works for me every single time. I never have torn eggs and I ALWAYS use "fresh that day" eggs. It is the simplest method for me.

Well, apparently it works without the salt

Yep this is the one that I use everytime and it works perfect.. my 13 yr old nephew made a dozen last night and he didnt get one bad egg...
