I processed several silkie & silkie cross roos last spring. Someone brought me 13 spare roos to dispose of. The meat had good flavor, there just wasn't much of it & all darker than a typical roo. As for the skin, I usually skin my birds anyway. The kids never even noticed a difference.

Both of the ones that made it to lockdown. The first ones did not develop at all, but finally 2 little ones are out. Makes it worth putting up with all that racket. This is the first time I've ever hatch guineas from our own eggs, I've purchased eggs before and those had low fertility also. Hopefully this a sign of good things to come.

Can you find the guineas hiding in these pics? They are trying to blend in.

My dad was over and was joking and saying you could sell it as a baby dragon carcass!!

...really,, I tasted no difference but it is a little off putting with the black skin..

these are the same asians that I was selling Balut to before I taught them to make their own, now they just buy eggs

for some reason I had trouble with even crossing these birds, the offspring was always on the smaller side and hard to raise, they would drop for no apparent reason.

can not speak for other places, but here in lancaster county, there's a market for these birds.....(gotta remember also, asians really like to haggle for lower prices, and they are good at it )

I have an update on the little duck... I would not recommend a little bantam duck for a family, but for 2 old farts it was just the perfect size..made my own version of an orange sauce.......
highly recommend everyone try duck..
net adventure will be the muscovy duck..
 
Muscovy duck is FANTASTIC. I smoked one on the grill with bacon and it was fantastic. Pekin is good too, but I think I'm moving on from Pekins to just raise the scovies. The scovies are delicate eaters and will forage, the Pekins eat with a gusto and choose feed before forage.
 
my duckies that I ordered last fall to help get new blood into my muscovy pen will ship tomorrow.......I have no idea where I am gonna put 16 ducks, my house pens are occupied with 2 baby bunnies that are in quarantine, some kind soul dropped off a few little bunnies like they were stray cats, I could only catch these 2...shame they are not large meat breeds,...

yep spring is in the air...
