You can keep skunks out of your coop or other outbuildings by hanging a bar of strong disinfectant or room deodorizer in the space.
I think building a cage with tight holes the chickens can’t stick their beaks in is best. It allows you to put it low enough for the skunk to really smell it.

Yup, I found out just in time myself. Cats eat them, and die. You are putting poison where a domestic(ated) animal can get it.
