My father was a chef. We used to make head cheese after pig processing. Fun times. I still can't get the smell out of my head and that was about 30 years ago... he let me bring the brain into science class though, that was a big hit.

Blarney, if you clicked on the link Fisherlady posted to the Serious Eats article on how to cook a suckling pig, you'd know why I mentioned eyeballs. The cooked pig in their photos is much cuter than food should be, and I'm not very squeamish otherwise.

Funny you should say that, my son in law has a big pig roast every summer, and you should see the drunks fighting over the head when it is being carved
