Pennsylvania!! Unite!!

I usually freeze beans also (you do not have to blanch green beans for freezing ).

Just a childhood memory that I would like to pass along but I was not old enough at the time to get the details of how to do it...

I found lots of sites telling how to string them, I am wondering if I can hang them in the barn rafters or if I need to keep them inside.....most of what I see hanging out seems to be just for decoration and not edible.

Actually those I know, I asked at a roadside stand once. I'm not southern, but have spent some time in the Carolinas and enjoy trying regional food.

Water, raw unshelled peanuts, ham hock, more salt than you think is reasonable. Out in big pot. Boil and keep on heat until whenever. I was told they never throw them out, just add more the next day. I like them from roadside stands, the canned ones not so much.

Never made less than about 10 lb, so I have no idea how to make a small amount.

These are leather britches...aka.. dried green beans..

I remember helping my aunt every summer when we went to Georgia, so maybe it is just a southern thing...but it was fun and something I would like to pass to the grandkids....they also came out rather tasty but I was a kid and have no idea how she cooked them....

you could always sell some, theres a lot of southerns up north that miss what they grew up with
