Tiny has been in & out of the coop all morning and has been in for the past 10 minutes solid...

I'm watching from inside the house to see if/when she comes out. I'm like a crazy helicopter parent right now

But am really trying to give her space, I don't want to bother her with her first egg lay!

I have a 'faux' apple pie in the oven right now. Made with zucchini..it is awesome & very hard to tell it is actually a veggie! 
Has to have time to cool, then the spaghetti squash casserole will go in. Taking plenty to the picnic!!
 Gosh..the house smells sooo good!!

To windy to be out on the Lake today, so staying at camp and cooking.

Just put a couple racks of ribs in the smoker and have some chicken to go in later... now have to figure out some deserts to make.
Yesterday was pinapple cupcakes with 7 minute frosting (like a cross between fluffy white and marshmallow fluff)
Debating between cheese cakey type, egg custard or jello/cool whip kind of thing...will probably give some options to DH and let him decide.

I have the perfect recipe for you! My camera sticks but hopefully you can read it. It's a family favorite here, even among those that don't like lemon.

But I just made one almost the same last weekend, only with a graham cracker crust, called pudding breeze. I like the walnut crust mix idea, DH is a big walnut fan, so will put it to use for sure!

Maybe just too mild or to prone to mushiness? Always worth an experiment though!
