I use this recipe quite a lot, sometimes with variations. It's nice and simple and quick.
4 chicken tenderloins
1 tbsp raisins
2 tbsp olive oil
salt and pepper to taste
1 cup wine (use your favorite)
1 tbsp pecans/peanuts/cashews
Cook tenderloins in skillet with 2 tbsp of olive oil until they start to brown.
Add raisins and wine, salt and pepper. Cook until wine starts to reduce to syrup consistency.
Serve with noodles or rice. Pour liquid over tenderloins. Makes enough for two people.
Dried cranberries are especially tasty.
