Does anyone here make pickled corn? If so, the only part that I am missing from my great-granmothers 100+ year old recipe is the duration in which to keep the corn in the crock. Help?

I could not say.

but i read you're thread anyway.

Nope it's a full cob packed in a really big stone crock. My granny has been asking me to make it for her and she finally found the recipe but the bottom was too faded

pickled mini veggies

1 qrt. mini veggie
water
3 cups distilled white vinegar
1 cup sugar
3 tbs. mixed pickling spiced, tied in a cheescloth bag

1. cook the veg. in water until half tender
2. boil vinegar with sugar and spicees and 1/2 cup water for 10 min. take out spices
3. add veg and boil a few more min. until almost tender.
4 pack veg in hot, sterilized jars and pour the liqued over it until filling the bottles. seal. process 10 min. makes 2 pints)

according to my ALL About Pickling book

then it has a corn relish recipe and it uses 18 medium size ears of corn (2 qrts corn kernals)

says put corn in boiling salt water and simmer 5 min. dip in cold water

drain...cut kernals from cob

combine ingrediants in a large pot..simmer 15 min

add spices

simmer 5 min...stirring

pack in jars, seal process 10 min. boiling water bath

is that any help?

Awww thank you, it is not what I am looking for but you are a doll for looking all that up!! This is like making sauerkraut, where you put it in a large crock for a long duration (?) and then after that time it has a certain flavor. It never leaves the cob or the crock unless it is about to be eaten. It is also salt cured and not vinegar cured although it does call for 1/2 cup apple cider vinegar. I hope I am making sense!
