Pickled egg recipes?

My hubby makes them, and just loves it. He adds the beets to his recipe. He likes this one because the ingredients are not hard to find, or most people have them already in their pantry or cubbard. We save the really big pickle jars to use for the pickled eggs. Here is that recipe:

1/2 c. water
15oz. can beets (save the juice)
1/4 c. brown sugar
1/2 c. white vinegar
1/2 tsp. salt
4 whole garlic cloves
1 cinnamon stick
6 hard boiled eggs
1 large glass container with lid

Add all the ingredients (except for the beets) to the beet juice. Cook over medium heat (number 5-6 on our stove) for 8 minutes, stirring occasionally. Add the beets to the cooked liquid, and cook for an additional 2 minutes. Place hard boiled eggs into a glass container, and then pour the rest of the ingredients (beets included) into that same container. Set in fridge for a minimum of 5 days before eating.
 
One year we had quail eggs running out our ears. I boiled them, peeled the shell off and put them into a pickle jar that I had the juice from pickles in plus I added chopped garlic and some jalapeno peppers too. I took a toothpick and ran it thru the eggs so the liquid would soak into the yolks. Put it in the refrigerator for about a week or so and they were delicious. I also tried this with banty eggs and they were very good also. Just a quick way to make pickled eggs without heating the kitchen. See what you think.
 
I used to make pickled eggs quite often. I rember the ingredients but the ration is slipping my mind.

White Vinegar
Water
dash of salt
approx. 1 TBSP of crushed red pepper
1 dried bay leaf
Eggs

I think it was 2 cups vinegar to 1 cup water but not truley sure. mix it all.

after eggs are peeled and cooled add eggs to jar. Pour the vinegar mixture over the eggs. Refrigerate for at least a few days.
 
How I make pickled eggs is, I buy a big jar of peppercinis(sp)and wait till its half gone add hard boiled eggs. I poke them with a fork and let them sit for 3-4 days in the jar before we eat them. They are so good.
 
Hello from Canada, I make pickled eggs alot and do it the easy way.
Make sure your eggs aren't fresh from the coop, they will peel alot easier if they are a couple weeks old.
Hard boil, so bring the water to a boil for a couple of minutes and then let them sit a bit. Run under ice cold water. peel
I use a one quart sealer, add one sliced onion to bottom of jar, put eggs in, add a couple of inches of white vinigar, fill with water and put in fridge for a week or more.
Hope you give it a try, they are so good.
 
Hubby and I have never had a pickled egg, so he made some this weekend. I havent tried them yet, but he used, garlic, onion, vinegar, celery seed, some mustard. do not remember if there was something else or not. Really, I thought it was just vinegar LOL!
He said it was good, but the eggs were hard. He let them sit for two days in the fridge and he did let the stuff cool first. Will they get softer the longer they sit or should we poke them with a toothpick next time too?
 
My mother makes pickled eggs with beets. I've never heard of vinegar and onions though, that's new! I'll have to steal her recipe, since I know she won't share it. It was like pulling teeth to get a jerky recipe, she must think I'll be selling recipes to Betty Crocker

My hubby will eat just about anything I make, so I'll try these pickled eggs and get back to this thread. LOL
