Will I know for sure if they are pullets or roos in 6 more weeks? My husband is taking a dozen white rocks to be butchered and wants to take any other roo that we have !

I would never process an EE rooster -- I'd sell it if I needed to get rid of it. People love EEs and I'm thinking you'd have no trouble finding someone to take it. I'm not at all opposed to processing birds, I just think EEs are worth more to sell than they are as dinner.
