I'd also go with a gift card since times are so tough right now. Another option and it sounds kind of silly but is received very well is a frozen turkey or a ham.

I don't know the financial situation of the employees but the year my old boss gave each employee a small baked ham was the best for DH and I. We couldn't have afforded one and we enjoyed sharing it with the family much more than I would have enjoyed scented candles or bath soaps.

Or what about a biscotti gift sampler complete with coffee? Vfem has it in her etsy shop, here's her listing on BYC. I can personally say her biscotti is to die for!

I Think you had some great ideas for the others the cookbook idea.. sounds great.. and the i tunes for the younger ones sounds great too.. if you know that they have i pods..
