When do polish chicks get their feathers that stand up? Do they have down that stands up to? Hatching some chicks now and wanted to know what to expect
(sorry, not sure what's it's called, fairly new to chickens)

I believe George/Georgette is around the 5 month mark
By stand up do you mean frizzle feathers? Either smooth or frizzle they tend to start to getting their feathers by a week. Not full feathers but you can see them starting to grow.
Mmmmm.... I am 50/50 here at 5 months of age. But the crest does not look too wild which would make me think male.
The feathers/fluff that stand up on the top Of their head. Do you see that when they hatch, or a week or so later?
Sorry, I'm not exactly sure what that part is called. The part by their comb.
They have fluff/down on them when they hatch and you can see the vaulted skull. It's like a dome on their head. ETA ~ their poof on the head is called the crest. Here are some pics of polish chicks, as they grow the down turns to feathers and the crest begins to develop ~

She does have large waddles though. And has not laid an egg. My Americana has been laying for a month now and they were the same age
As her head feathers, crest as u said , it was like a little sleeve that came off and the feathers fluffed out. But my hens was always rounded
