It was barely even brown! One edge got a little crisper from the hot pan and oil. The rest wasn’t.That sheet was burnt! Dark brown is burnt you nutter.

They had been in the freezer for a while. I sauteed them with butter and salt. That's it. Maybe they were just old.Bitter sounds strange. They are a different taste. I will add mine to the bones to make bone broth. After done, I will pull them out and they are mild and tender. Add to eggs the next morning in place of sausage or bacon.
Do let them rest. Pass rigor. They will be much more tender. I've also fried them with the eggs and they are chewier this way, but not bitter. I'm just not a fan on chewing on rubbery meat.
