Hi and welcome - so sorry for your loss.
Yes, they will dig again - they have found an "all you can eat buffet" and they will come back until the food supply is exhausted. Covering the hole is not going to stop them. What is your set up? What sort of wire is around your pen? Do you confine the birds to a house at night or are they able to get out into the pen at will through the night?

I'm not just a chicken owner I'm also a trapper. That might be a hobby to take up. Or hire a trapper to help. A friend of mine set up a tripwire that set off all kinds of lights, like a Fourth of July explosion when it was triggered

With the Fourth of July holiday season coming up you can get lights anywhere these days. At minimal cost. We also used old wind chimes. The clang and bang really help. Our problem STOPPED after we put our pit bull out at night in the run around the coop. She is COMPLETELY EFFECTIVE!!! Security floodlights also work set for motion detection. Then I usually throw out a package of firecrackers and they're gone. bottle rockets work very well raptors. When I see bald eagles I should of bottle rockets.
