Oh...yummy....this is so easy to make anytime you need a nice light cake, not too sweet at all. Tastes great with a little ice cream or cool whip.
4 c. flour
2 1/2 c. sugar
4 eggs
2 tsp. baking powder
1/2 tsp salt
1 1/3 cup oil (I use canola)
1 3/4 c. milk
2 tsp. (or a little more) vanilla, almond extract and lemon extract.
2 T. poppy seeds
Mix them all together in a bowl with a mixer. Grease 2 bread pans, put mix in both pans. Preheat oven to 350, cook for an hour. Take out and cool.
Topping:
about 1/3 c. orange juice and confections sugar to make a glaze, poor over the top.
They freeze incredibly well. I have had them when taken out of the freezer for several months and they are just as good as day one.
