They are pictured at 5 - 6 months old.

Breed clubs are a great place to go and see birds that are both for Exhibiton and just being pretty in the back yards. United Orpinton Club will provide a breeders list after you join. Well worth the money. Then find someone who will help you get a start in the variety you like. Go see who is doing all the winning. Study their birds. Get familiar with the terminology.
Look for "type". Always breed for type first, then let everything else sorta fall into place with selective breeding.
Most all of your questions have an answer provided in the book of standards. I also like to go buy the pics of the winning birds found in the POULTRY PRESS. There are many more great breeders who have great birds that do not show. But, unless they provide pics to compare to what is winning it is hard to say who has the best birds for your situation.

The project lavender orps are looking lovely..wont be to long till we can all drop the word project..

Heres some more project orps in progress.. mottled and jubilee
The mottled hens are being recrossed against are east coast exhibition orps as of right now.. some the jubilee pictured will be crossed against are 2nd part of that project..next spring should be looking real good on these as the fluff factor will be improved upon 100%..

My JewBilly project just started, and it shows. I have at least one cockerel and one pullet from those 5 eggs I tried to hatch back in March.

Sorta like this Roscoe baby boy

this pullet is from my Buff cock Tonka as the daddy

That is very much a project. For now my BO's stay with BO's and SS's are with SS's. Maybe next winter when Tonka gets out and has some with an SS I can add to these. I'll keep them a few more months. If they look too much like they need alot more numbers to make it work, I'll let you go it alone. I have too many Blacks Blues and Buffs to keep strait and know who was with who. Good luck with your next years generation. Your blacks look great. keep a good thing going.
