Sorry for the late response......
hardboil the egg, peel it and place in a cold smoker - like a littlechief smoker. I have used both Hickory and I have used apple wood. - I feel the hickory gives it a stronger smoke flavor. I would say - what ever your favorite smoking wood is... use it.
Also be sure to use the entire smoked egg in your mixture for the middle of the deviled eggs.
