OP, I'm ashamed to admit I've never canned anything. I hope this year, my garden will produce so much, I won't have a choice. I think it must be so great, in the middle on winter, to walk in the pantry and grab something that you grew in your garden.
BTW, you canning look beautiful. I hope when I'm ready you will give me some tips. Maybe you could do a guest blog on the subject for my blog.

DEFINITELY NOT that simple! You have to make sure you process it either in a Hot Water Bath or a pressure canner...

I have a pressure canner that my grandma gave me but I don't like it. It is the rubber seal style and I prefer the screw down kind. We eat a lot of food that canned chicken would really come in handy and I admit to buying canned chicken occasionally...

I have heard that if you like the canned stuff in the stores, then you will love home canned chicken.
 
we got the 23 qt one on amazon it was only $10 or so more (Presto) and I can double my amt of canning at one time...
you will learn to love your pressure canner!!
