Just wash them....poke some holes in the skins with a fork and stick them in the microwave and microwave on high, turning about half way through the cooking time, until they are fork tender. One sweet potato will take about 8 to 10 minutes depending on how big it is. Then split it open, hit it with some salt and butter and enjoy....

I can post pics tonight after they're made! I found the recipe on the Ball website and it sounds so good! Especially because oranges are EVERYWHERE here and its mandarin season also mmmm! I was gonna do 10-20lbs of mandarins hopefully! My mom has never canned before so I picked this recipe to do together. Should be fun!
