potato soup

I want to make a potato soup. I heard of doing it in the crock pot and want it to be cheesy and a bit spicy. Do you have any good recipes for me to try?

I thought I could add some nacho cheese sauce and get a bit of spice at the same time as cheesy.
 
I got this recipe from allrecipes.com... we really liked it, although I left out the sour cream.

Hearty Potato, Bacon and Onion Soup

Ingredients
· 4 slices bacon, diced
· 2 tablespoons margarine
· 3 onions, chopped
· 4 tablespoons all-purpose flour
· 4 1/4 cups water
· 1 cube vegetable bouillon
· 4 potatoes, cubed
· 2 egg yolks
· 1 1/3 cups sour cream
· 1 tablespoon chopped fresh parsley
Directions
1. In a large saucepan over medium high heat, sauté the bacon for about 7 minutes, or until lightly browned. Reduce heat to medium, add the butter or margarine and onions and sauté for about 5 minutes, or until onions are tender. Add the flour and stir well for one minute.
2. Remove saucepan from heat and gradually add the water, stirring well. Return to stovetop, raising heat to high. Add the bouillon and potatoes, bring to a boil and then reduce heat to low. Simmer uncovered for about 10 minutes, or until potatoes are tender.
3. In a small bowl, combine the egg yolks and the sour cream and mix together. Gradually add this mixture to the soup, stirring well. Heat through, but do not boil. Stir in the parsley just before serving.
 
Here's the one I make all the time. You can add shredded cheese to it to make it cheesy.

Katy's Potato Soup

Brown 1 pound cut up bacon until brown and crisp in a large dutch oven.
Remove from drippings and set aside.

While you're browning the bacon: Dice up 4-5 potatoes, grate 1 large carrot, chop up one medium onion.

After you have removed the bacon from the drippings add the potatoes, carrot, and onion. Cover veggies just barely with water and cook till veggies are tender. Do not drain!

Melt 4 Tablespoons of butter and add 4 tablespoons of flour. Stir until smooth. Add 3-4 cups milk. (I'm not real sure on that amount of milk since I just pour and stir until it "looks right")! Stir and cook until smooth. Add this mixture to the veggies and continue cooking until nicely thickened. Add the bacon and salt and pepper to taste. Tastes even better the next day.

This is the one I make in the crock pot--

Cut potatos & onions into pieces/chunks, rinse and put into crockpot with a can of cream of chicken or mushroom soup-add can/cans of chicken broth to cover. Cook on high for a time then on medium or low for 8 hours-cut 8 oz of cream cheese into small chunks add to your soup and turn it on high for a while to melt the cream cheese. I will probably add some of my homemade yogurt to it next time I make it. I also add a little dill and salt & pepper to taste of course. We love this soup-you can serve it with additional chedder cheese on the side if you like more cheesy taste.
Oh, I forgot to add that I usually saute my onions in some butter or nuke them in the micowave till they are tender-& sometimes I add celery if I have it.
I also like to add a couple of cans of chopped clams to it at the end if I have them.

I don't know if it's the same recipe or not but I made a leek and potato soup from allrecipes and added a can on clams to it....liquid and all....it made a wonderful clam chowder.
