im very good at cooking pork if i do say so ;) but chicken is still very foreign to me

so i have a 13ish month old partridge rock roo, killed about a month ago, froze right away after cleaning and bagging, so yesterday i took it out defrosted it and put it in a large stock pot with a gallonish of water sea salt and raw sugar, i just now took it out, its been in there 24 hrs or so, its all limp and pliable and in general doesnt feel like the same bird lol i was worried when i took him out yesterday

and actually im still worried, see the hubbs is away and when he comes back tonight he will have a friend in tow, i had hoped to have a nice dinner ready... its a lot of pressure for me lol.. ive gotten lucky so far, everything i have cooked has been new to my one way or the other, i dont follow recipes i literally throw spices in and somehow its all very edible when it comes out, my trick is to add lots of flavor lol

but older roo.... stronger flavor....

so... currently the 3/4 lb birdy is on low in the crock, with almost 3 cups water, 2 bouillon cubes, almost a whole beer *I had to sample to make sure it was good, ya never know

* Mr. roo is breast side down, and i rubbed a bunch of spices on its back, kinda a fail safe lol, we dont eat that part to if the concentrate is too much, it shouldn't be too strong for the meal itself... anyway iver got garlic powder, onion salt, celery salt, lemon and herb seasoning, and ill add turmeric when i find it lol... its a tight fitting lid with a gasket so the moisture is better retained... i love my crock

... anyway its got like 4 hrs if it needs it...
