Probably the dumbest canning question EVER!

It was 55 min. I read the little book about a zillion times before I even started. My oldest son actuallly requested that I read, read, and re-read it....just to be sure. LOL I got really impatient waiting for that little pressure indicator to drop....but I was good and kept my hands off. I have seen someone open a hot radiator cap on a car. I kinda pictured the same thing happening and DID NOT want that!!!
 
I have an all american 25 qt canner that I can't use on my ceramic cooktop. I am going to buy a single burner thingy to put on my counter so I can use it this summer.

I am having beet deprivation and need to can my beets.

I noticed a lot of the pressure canners are alluminum....

I suppose it doesn't make TOO much difference as you have jars in the with the food in the jar.
 
You will do fine with the 16 qt, I like the bigger ones myself. I also like the older ones. I got mine off Ebay because the new ones look a little thin and scary to me. But if you ever get an old one, be sure to have your guage tested and replace all your seals.

BTW Home canned Green beans are the best
