For question #2, I think yogurt only has 2 live cultures, and no grains. While Kefir grains produces the drinkable Kefir (over & over again) that has 32 or more live cultures that are good for you. But, I think Ernie will be better able to answer this.

Ernie.... While drinking my peach & cinnamon kefir smoothies tonight with my daughter, she asked if could use Kefir to make Ice Cream?? I have an Ice Cream maker. Do you think this would be do-able?? If so, I'm going to get started on that!! Peach Kefir Ice Cream sound wonderful.

So Kefir is or is not, just a wonderful drinkable yogurt smoothy ?
Does it actually have more cultures ?
We have used live cultured yogurt to start new cultures, and if a bit runny, or thick add milk until it is smoothy consistency, just asking.
And, still bothers me to call them "grains"...I am so allergic, worse than an allergy, to most grains.

Ok here we go Yogurt only has like one active live culture or maybe 2! Kefir has almost 42 live active Probiotic and Yeast cultures! And Ok instead of grains lets say these are Live Kefir clusters! No grains involved!!!!! The clusters are actual living organisms and use the milk solids for a food source and leave behind Probiotics and yeast!! OH and yea they leave the Whey behind too which as we all know Whey is just pure Protein! Right!!!!! Hopefully this helps but there is no comparison to Yogurt and Kefir as Kefir has so many more Probiotics involved!

Ernie, Thanks for the tips on the straining. I'm thinking i must need to divide my grains or remove some of the little curds. I am getting literally 1/4 cup of little white curds in addition to my large kefir grains. I'm going to have to take a picture of them to show you guys...it sounds like Sandi is just getting a few little clingy curds, I have a TON! I must be using too little milk to grains.

I have to try making kefir ice cream! That sounds so good....and the caake sounds yummy too.

I have made it with just sugar water, sugar water and dried fruit, cranberry juice with a little sugar added (my favorite), sugar water and ginger (tastes like ginger ale), peaches that I had in the freezer and a little sugar. They are supposed to feed off of fructose instead of lactose, but can be adapted from milk ones, but I got ones that the previous owner had never known of them being in milk since I was sharing with a friend with milk allergy. Silly me, I thought all these years, that the whey was waste, as in watery nothing as the proteins and carbs are eaten by the culture...whey is typically tossed to the hogs, after processing cheese, yogurts and cottage cheese. It has little to no nutient value, as I was told. Hence the pigs got it.

So as I stand here next to my mailbox waiting for my Choclate cake to come from Sandi??? Its getting really cold out here toooo!~ Ohhh and its starting to snow again!! HOPE MY CAKE COMES Soon
